I kinda beginning to like this Wiki stuff, and I was wondering if there's a possibility that there's anything like it that one can run on a personal desktop, without the need to run some sort of "server" software...

Not that i know of, no.
But setting up server software on your own desktop isn't really that hard. If you're on Mac OS X you already have Apache and PHP running right out of the box. I know very little of Windows machines, but it should be possible to set up php to run locally as well...

Unfortunately, I don't have the time to go through the list to see what works (not)... Well... I actually did fiddle with some of them (I couldn't help it)... The main problem is that they all use a different syntax... and none of them uses the same syntax (square brackets and stuff like that) as "our" Wiki... Then why not install the full monty (MySQL, Apache, PHP, MediaWiki itself) on my machine? It seems so damned complicated... But if this is what it takes... I'll think about it...

Which free (as in “no money”) Wiki hosting service would you (as in “all you readers out here”) choose, if you (etc.) decided you (etc.) needed a free (etc.) Wiki hosting service for some experimental noodling (whatever that might be)?

Google is not exactly my friend. OK, it gives me a zillion pages to choose from, but it doesn't say me anything I want to hear: a good, objective opinion about what site to go for. I don't want ads, I don't want slow performance, I don't want entering the site to be like playing Russian Roulette, ... you get the idea: I want everything for nothing...  So, where are all these humans, who surely must have an opinion?

Yes an Apple is always the answer  The next version of the Mac Server OS (Leopard) will have Wiki stuff built in. An Apple a day, keeps the doctor away?  Why would I want an Apple server?

So, where are all these humans, who surely must have an opinion? So define your search more accurately and use Firefox with the Customize Google add on ;-) Why would I want an Apple server?

Maybe I should go for www.wikia.com... They even have a Zappa thingy: http://music.wikia.com/wiki/ZappaWhen you check out the “Freak Out!” page, it says “Further Reading: Zappa Wiki Jawaka”... Yes folks, we’re famous!
